Entrée: Scallops Provencal

Wine: Ladoucette Pouilly-Fume 2021 Sauvignon Blanc

 

Ina Garten, The Barefoot Contessa, is our Chef of the Month. Watch her online as she prepares Scallops Provencal. She stats by salting and peppering the scallops before tossing them in flour and then into the pan with melting butter. After turning the scallops, start adding chopped shallots and garlic with more butter. Finally, add chopped parsley. She finishes by adding white wine and stirring the bottom of the pan until the sauce captures every little brown bit. The scallops and sauce are then plated with white rice and parsley.

The Wine of the Month is Ladoucette Pouilly-Fume 2021 Sauvignon Blanc. The delicate and complex olfactory expression opens on aromas which remind of white flower, exotic fruits. There is a very beautiful complexity for a vintage where the end-of-season’s sun brought a lot to the aromas. It will compliment the flavors of Ina’s Scallops Provencal and its sauce perfectly.
